I haven’t made tacos at home since being diagnosed and decided the other day that it is time to give it a go again. I looked up homemade taco seasoning online and came across Alton Brown’s Taco Potion #19 which doesn’t have any garlic or onion in it. It does have both chili powder and cayenne however which seems to be hit or miss for me. Since I’d just bought some whole wheat tortillas and had some green leaf lettuce in the fridge we made burritos instead. It doesn’t say how much to use per pound of beef, but I had to apply it a bit liberally adding it to the meat 3x to taste it. My sinuses are making themselves known today, but my husband didn’t taste it on the first try either. I only had regular paprika though so I wonder if the hot smoked paprika would have made much difference. I just bought a spice jar for a spice that came without a sifter top? (the right name is failing me) so that was rather convenient, but alas too small for the 1/4 cup and 2 tbs the recipe makes so I ended up putting the rest in my now-empty chili powder jar.
Note: To this Texan it wasn’t spicy in the least.
